Dried Shrimp and Boiled Egg Gumbo

If you've been keeping your attention on the weather like we have you'll know that we've got several cold nights coming up in south Louisiana this week, so of course we couldn't resist posting a gumbo recipe! We would like to thank Lori B. for sharing this delicious shrimp and boiled egg one with us. Try it out and let us know what you think - it's guaranteed to keep you warm and cozy regardless of how chilly it gets outside. 

Ingredients

  • 3 bags Pop's dried shrimp
  • 2 cups hot water
  • 2 quarts water
  • 3 heaping tablespoons roux
  • 1 onion (chopped)
  • 1/2 bell pepper (chopped)
  • 1 stalk celery (chopped)
  • 1 clove garlic (chopped)
  • 1/4 cup onion tops
  • Cajun seasoning (to taste)
  • 1 tablespoon Pop's Golden Gems shrimp powder
  • 6 boiled eggs (peeled)
  • 1/4 cup chopped parsley

"Soak the dried shrimp in hot water for 15-20 minutes. Add 2 quarts of water to a tall pot. Bring to a boil. Add the roux. When the roux dissolves add the next 7 ingredients and the shrimp. Simmer for about 15-20 minutes. Add boiled eggs and parsley."
