This savory quiche recipe uses dried shrimp to take it up an extra notch. Hearty vegetables and seafood give this dish enough substance for a brunch or a light supper.

Ingredients
1 - 1.25oz package Pop's Golden Gems dried shrimp (soaked in warm water and then drained)
1/2 cup chopped onions
1 - 2 cups chopped broccoli
1/2 cup chopped mushrooms
Spinach leaves (about two handfuls)*
Salt
Black pepper
3 tablespoons olive oil
3 eggs
2 cups heavy cream or half-n-half
1 cup shredded mozzarella
Cajun seasoning
Deep dish pie crust (fresh or frozen - unbaked)
* listed vegetables can be replaced with veggies of your choice
Directions: Set shrimp in bowl of warm water to soak.
In a large skillet, saute vegetables in olive oil until softened (about ten minutes). Season with salt and pepper to taste and remove from heat.
In a large bowl, whisk together cream, eggs, and mozzarella. Add sauteed vegetables and drained shrimp. Add Cajun seasoning to taste. Mix together well.
Pour entire mixture into pie crust and cook at 350 degrees Fahrenheit for one hour.
